TUNA BOATS
The other day my oldest little and I went to a cooking class through Champions for Change. It was a great introduction to the food pyramid and healthy options. They played games and had discussions on what food in each food group. At the end of the session, we made these yummy Tuna Boats. My little ate them up so quickly and was sooo proud of what he accomplished! Being the super mom I am (read with sarcasm), I bought the ingredients (from memory mind you) and we decided to recreate them for our little fam.
Soooo ladies and gentleman, here is my hot mess mom’s easy peasy, you CAN do it better than me, recipe. I take this as a starting point and you can customize it as necessary. LOL You really can’t go wrong here… I am living proof.
Ingredients:
-3 Cucumbers
-1 Green Onion stem; chopped into tiny pieces, but big enough for a crunch
-2 Celery stalks; chopped into tiny pieces, but big enough for a crunch
-1 can of white beans (I used pinto because I am a dork)
-Tuna in water (for health)
-Some mustard
-Salt & Pepper
-Lemon Juice (we used the whole dang thing)
Optional: Tapatio Sauce, anything else to add texture: Red pepper, green pepper etc..
- First cut the ends of the cucumber (I personally saved these for spa water HAHA) and peel the skin off. This can be done with a peeler (easiest way) or a knife. Cut the peeled cucumber in half and then in half length raise. From there (my sons favorite part) scoop out the seeds. Thus you have your boats!
- Next take your beans and put them in a bowl. Smash them down with a fork.
- Add you’re the rest of your ingredients to the beans and mix well. Add mustard till you reach the preferred taste.
- Serve! I added Tapatio (amazing).
I swear they taste better than they look in the pictures.
Add everything into myfitnesspal to get the calorie count, because girl… I don’t know. HAHA.
